"Leber Ragout"
(Beef liver ragout)
Ingredients: 1.5 lbs beef liver
1 large onion
1 tbs. butter
2 cups beef broth
salt, pepper
1 tbs. flour to thicken broth
Directions (follow photos below):
Wash liver slices and let dry/pat dry. Cut onion in larger slices and saute in butter.
Cut liver in bite size pieces, cut away any other tissue.
Add some cooking spray to separate pan and brown liver for about 2 min. from all sides. Then season with salt and pepper. Add onions back and prep "gravy". Use the pan you had the onions in, add 1 tbs. butter, 1 tbsp. flower and 2 cups broth. (beef broth)
Once thickened pour over liver and onions. Done!
