Knollensellerie Salat / Celery Root Salad (gratin)
(serves 4)
Ingredients:
salt, pepper
note: you may change the cream cheese to Roquefort about 1/3 of a cup. I just stay with the cream cheese wedges because my kiddos are not yet into the moldy cheese.
Directions:
Cut celery root in small french fry pieces and blanch in salt water for about 5 minutes.
Drain almost all water, just keep about 1 cup.
Put celery in oven safe dish, add ham, salt pepper.
Mix cream cheese wedges with heavy cream and some of the kept cooking water and poor over celery. For a leaner version I use just the cooking water, the cream cheese wedges and a bit of milk. The heavy cream and the Roquefort are just much stronger/heavier in taste, so try for yourself. The later also turns the salad dish more into a gratin.
Put in oven at 175 C or 345 F for about 25 min.
Leaner version keeps for a few days in the fridge. Have not kept the heavier Roquefort version for more than a day.
