Grossmutter's Lebkuchen (Grandmother's Gingerbread)
This is an original German recipe, which was printed on the back of an old style Advent Calender I got in Germany.

Ingredients:
200 gr honey
50 gr sugar
2 tbsp. oil or butter (I used grape seed oil, but canola would do fine as well)
1 egg yolk
each 1 tip of a regular dinner knifes tip of clove powder, cardamom powder and piment powder
1 teas. cinnamon
300 gr flour
10 gr backing powder (about 1 full teaspoon)
100 gr almonds (finely ground)
100 gr hazelnuts (finely ground)
75 gr candied lemon peel (cut in small pieces)
50 gr dried apricots (finely chopped)
For the top:
150 gr powdered sugar
1 egg white
Preheat stove to 356 F or 180 C (cookies will bake for about 15 min)

How to put all of the above together:
Heat honey and sugar in a pot until both are mixed well and sugar has dissolved.
Add oil and pour all in a bowl. Let cool to room temperature, add egg yolk and spices.
Mix flour and baking powder and add slowly to mass. Then add almonds, hazelnuts, lemon peel, apricots. If dough is too dry, add one whole egg or small amounts of water until you get a dough, that comes off the bowl sides and is easy to roll out to a thickness of about 1/4 inch or 0.5 cm. Cut out any shape you like for your gingerbread, can be a round or rectangular
shape or even a gingerbread man shape.
Add half almonds or other embellishments if you like and back for about 15 min. at 356 F.
Take of baking sheet immediately and brush with the mixed powdered sugar and egg white.
You may also use powdered sugar and lemon juice.
