"Kokusmakronen" (Coconut Macaroon Cookies)
Ingredients:
4 egg white
200 g powdered sugar (6.5 oz)
250 g unsweetened shredded coconut ( should be dry!) (8 oz)
juice of 1/2 lemon
zest of 1 lemon
Preheat oven to 350 F or 180 C
Directions:
Whip powdered sugar and egg whites until stiff. Carefully fold under the shredded coconut, lemon juice and zest.
Take regular size "dessert spoon" or "coffee spoon" and scoop with this size spoon small heaps on parchment lined cookie sheet.
Bake on middle rack for 10-15 min. / until slightly browning from bottom up begins.
Take out and let cool on cooling rack.
Optional:
1. Add 1 hazelnut on top of macaroon prior to cooking
2. Dip tip / half macaroon in melted dark chocolate
Store in tin for about 3 weeks.
Enjoy!
Note:
Some recipes will use the metric system, others I may took the time to convert them or they are listed in both.
If you need to convert the grams, milliliters etc. to spoons, cups, pints, ounces being US, UK, AU or any other odd measuring amount, do not worry about 100 % absolutes. Being close is usually just fine.
Below is a link to a converter web page I like to use. But there are plenty more sites out there to pick from.
