Cranberry Sauce (low in sugar)
I did not grow up with cranberries, but with red currents and a few other tart red berries, so it took me a while to cook myself through various cranberry sauce recipes. Most were way to sweet for my taste. So here is what I came up with:
Ingredients:
12 oz fresh cranberries
3/4 cup of sugar
1/2 cup of orange juice
1/2 cup of water
Boil sugar, water and orange juice until sugar has dissolved.
Add cranberries and boil for 10 min. Then slowly mash the mix with a potato masher or large fork while on low heat. Let simmer for 5 min. to thicken.
Put in a large canning jar or serve.
Enjoy!
