Marillenknoedel (Potato Dumpling with fruit filling)
Ingredients: about 1 kg (2 + pounds) potatoes cooked day prior, peeled and pressed through a "potato press"

1 egg or 2 (depends on potato/size of egg)
250 gr. or about 9 oz. potato flour
pinch of salt
Directions for plain dumplings:
Once potato mass is in bowl take out 1/4. Fill the empty space with potato flour and add the 1/4 of take out potato mass back in, add egg and salt and mix. Form medium size dumplings (just so that the hands close around them) and pop in them boiling water for about 5 min. They will swim at the top of the pot when done. Take dumplings out with a spoon that allows the water to flow out.
Fruit filled dumplings:
Prior to cooking, roll ball, press thumb in the middle and add some fruit in center and close dumpling folding it over the center and roll in ball again. Finish all dumplings off and add them at the same time to the boiling water!
Melt butter add bread crumbs and brown sugar and brown a bit and sprinkle over dumplings.
Top with extra fruit and enjoy!
Savory version:
You can also fill the dumplings with small chopped veggies or bacon or croutons.
The savory version goes well with pork, red cabbage but any other meat dish will do too.
