"Spaetzle"
(a special German style noodle)
Ingredients dough (this feeds 4):
300 gr. flour
3 eggs
125 ml water or broth
a pinch nutmeg
1 Tbsp of butter
Spaetzle maker
($ 10 at www.casa.com (via Walmart or Target or straight from
www.casa.com). I did post a picture of mine at the bottom of this
page so you know, what I am talking about)
Bring water with some salt to boil in large pot as if you cook any other noodle kind.
Directions:
Mix all ingredients together. This dough is very very sticky. May want to use gloves. Fill the square basket about 2/3 full. Hold with your thumb out and the 4 fingers in/on top of the dough slightly bend inward and push dough down with back of your 4 fingers while moving the basket back and forth along the rim. The "Spaetzle" will fall in the water. You should do this in a swift manner, but not so fast that the things splatter around. The noodles cook within 3 - 4 min. Gently push the last batch with a wooden spoon below the surface formed by the almost done noodles. 2 min. after the last dough dropped in start fishing out the noodles with a flat holed ladle. Add the butter to the Spaetzle to prevent them from sticking to one another, same as you do with spaghetti.
Guten Appetit!
PS. For easier clean up soak the utensils for 30 min. in luke warm soap water and then wipe clean using your hands at first. This dough will stick to you sponge, so do not use the sponge unless you want to through it out. It really comes off easy once it has soaked a bit.
