"Dampfnudeln"
(Yeast dough dumplings)
Ingredients dough: Ingredients for sauce:
1 egg - 4 cups of milk
1 cup milk - 2 egg yokes
2 cups of flour - 1/2 stick butter
1 Tbsp of butter - 1/3 cup of starch
1/2 teaspoon of salt - 1/3 cup sugar
1 cube of yeast or dry - 1 vanilla bean

Directions:
Dough is prepared like pizza dough.
Put flour in bowl, make a fist in the dough, crumble yeast in and add half the milk (warm), let rise for 20 min. covered in a warm place. Add a pinch of salt, rest of milk and butter and knead into dough for about 4 min. (no dough should stick anymore to sides of bowl). Form 8 small balls out of dough and let them rise for another 40 min. on a floured board.
Pour 2 cups water + 1 Tbsp butter in big pan and bring to boil. Add balls and cover with lid. Reduce heat to a bit a setting between low and medium and let cook for 20 min.
DO NOT LIFT THE LID!!!! NO PEAKING!!!! Otherwise the dumplings will deflate.
They are ready when you hear a slight sizzling from the pan.
Vanillesauce:
Mix 6 yokes creamy
Use 6 Tbsp milk and mix with starch until smooth
Bring rest of milk, sugar and mark of vanilla bean to boil in pot, then add starch mix and cook for 2 minutes, pull pot aside, add egg yokes and bring back to boil for 30 second while stirring.
Use warm or cold with "Dampfnudeln". Just pour 1 /2 cup over 1 dumpling.
